Honey Garlic Sriracha Chicken

Chabé Chili sent me a case of six bottles of their sriracha, a staple hot sauce used in Southeast Asian cuisine. While I use hot sauce on a lot of my foods, I wanted to cook with it and decided to make some honey garlic sriracha chicken to pair with my cheese ramen.

Recipe for the marinade/sauce
Mix the following in a small bowl
-1/3 cup honey
-2 tablespoons sriracha
-3-4 cloves minced garlic
-2 tablespoons rice wine vinegar
-1.5 tablespoons low sodium soy sauce
Taste the marinade and adjust ingredients to your taste. I like my marinade more on the spicy side. Use half to marinate your chicken thighs overnight. This recipe was probably enough for 4-6 pieces; I was only marinating two pieces at a time and I had a bit of the marinade/sauce left over. Save the other half to spoon over your chicken after cooking.

The next day, pull your chicken out of the fridge and sear on a pan with some oil on medium heat for 2 minutes on each side; 4 minutes total. Due to the honey, you may end up with some carmelization on your pan. Transfer to a baking sheet to bake in the oven at 450 degrees for 4 minutes on each side; 8 minutes total. I decided to slice up my chicken to serve.

While my chicken was in the oven, I chopped up some veggies I had at home to pair with my ramen, Ottogi cheese ramen! *Disclaimer: this is an Amazon affiliate link. Ottogi’s is the first cheese ramen I’ve tried and the last time I went to the Korean market, I noticed there were 1-2 more different brands also making cheese ramen, including Samyang. I’m waiting for it to go on sale to grab a pack and try. So far, Ottogi is a great low-cost option and it’s delicious. What was strange though was that the packaging was in Korean. I managed to decipher to cook the noodles for 4 minutes; the rest is self-explanatory since the soup base and cheese powders all go in at the same time after the water boils.

Add your chicken on top of your ramen, and that’s it! I added some shredded cheese to my ramen to mix in (after taking this shot) to make the ramen more cheesy and thick.
